Veggie Grill taking root in Chicago

Veggie Grill is opening its first Chicago location Feb. 15 at 614 W. Diversey Pkwy., in the Lakeview neighborhood. It will be the brand's 29th location and marks the first in a series of expansions outside of the West Coast.

"We are thrilled to unveil the new Veggie Grill to the Lakeview community and serve a wide audience of veggie-positive guests who are looking for a convenient, healthy and craveable meal," Veggie Grill CEO Steve Heeley, said in a company press release. "This new restaurant also marks the beginning of the next chapter for our brand as we begin to expand away from the west coast. The city of Chicago, known for its innovative culinary scene, is the perfect place to share our chef-inspired veggie-centric cuisine."

With the first Chicago opening, Veggie Grill will unveil a new store design and prototype, which reflects how the brand continues to focus on both convenience and innovation. The 2,000-square-foot space features an open-air kitchen, where guests can watch as food is freshly prepared, as well as a separate area for take-out orders, Heeley said. Deemed the "urban farm" the layout of 40 seats includes a variety of seating from intimate or solo to a communal table, where guests can gather, connect and share.

Veggie Grill's Lakeview location will feature a menu with bold flavor profiles made from 100 percent veggies, fruits, grains, seeds and nuts, according to the release. The culinary team will serve burgers and sandwiches, tacos and burritos, entree salads, bowls and more. Veggie Grill favorites such as the VG Beyond Burger, Santa Fe Crispy Chickin' sandwich, Rustic Farm Bowl and Mediterranean Supergreens Salad will be available along with the restaurant's seasonal menu.
